Carrot Cake Protein Cupcakes


 
These carrot cake cupcakes are made with @shazeats_mandysway Bran Protein Batters. The batter is thawed and piped into 24 cup cakes. Shredded carrot and a dash of cinnamon is added and then swirled and baked in the oven for 12-15 mins at 180 degrees. They taste delicious as is but I make a frosting out of fat free cottage cheese, stevia liquid and vanilla essence. They are ideal for breakfast or for your snacks!!!! I usually freeze them without the frosting and take out as I feel for them.
