Chicken and Vegetable Lettuce Wraps with a Hoisin Dipping Sauce

These lettuce wraps are delicious and bursting with flavor. Chicken and vegetables in an Asian flavour, are a great idea for entertaining but in the month of Ramadhan for Iftaar. #thesavouryrevolution
 
2 chicken fillet cubed
 
1’red onion diced
 
1 cup courgette chopped
 
1 cup carrot chopped
 
1/2 cup green beans chopped
 
1/2 cup baby corn diced
 
1/2 cup mange tout diced
 
1/2 cup red, yellow, green peppers diced
 
1/2 cup spring onion diced
 
1 tsp garlic
 
1 tsp ginger
 
1 tsp Dry Chili Flakes
 
2 tsp Chinese spice
 
2 tbsp rice vinegar
 
2 tbsp soya sauce
 
2 tbsp sriracha sauce
 
2 tbsp sweet chili sauce
 
1 tbsp olive oil
 
Salt and pepper to taste
 
1. Heat oil in a pan, sizzle garlic and ginger, add chicken, salt , pepper, chili flakes, Chinese spice. Cook till the water dries out.
 
2. Add all the chopped vegetables and sauté for a few minutes.
 
3. Add in soya sauce, sweet chili, siracha, rice vinegar and toss the mixture.
 
4. Place a lid on for a few minutes and steam the vegetables but make sure that they still leave a crunch.
 
5. Let the mixture cool and then take whole lettuce leaves and fill. Serve with a hoisin dipping sauce and enjoy!!!!
