Roasted Vegetables, Feta and Fig Salad


 
Vibrant roasted vegetable and feta
 
and fig salad with mixed greens and herbs make it a filling salad that’s so easy but impressive. Make it as a healthy lunch or as a delicious side salad that everyone will love.
 

 
Ingredients
 
-250g mixed vegetables that are sliced such as carrots, onions, courgettes, beetroot and mushrooms
 
-1tbsp olive oil
 
-2tsp vegetable spice blend
 
-2 tsp sweet paprika -bag of Woolworths salad mix herb and greens
 
-4 figs quartered -4tbsp mixed seeds optional
 
-100g fat free feta cheese, cubed
 
For The Dressing:
 
1tbsp olive oil
 
4tbsp Balsamic vinegar
 
½ tsp dry chili flakes
 
salt and pepper to taste
 
Method
 
1. Heat the oven to 200C. Peel and slice vegetables . Toss with the olive oil, vegetable spice blend and sweet paprika. Roast for 20-30mins tossing halfway through cooking. Let the vegetables cool.
 
2. Layer a dish with the greens. Place the roasted vegetables on top. Top with figs, feta and nuts. Mix the dressing ingredients and drizzle it over the salad.
