Nacho Spiced Chicken, Quinoa and Black Bean, Corn and Cabbage Salad
Black Bean, Corn and Cabbage Salad
1 tin of @woolworths_sa black beans
1 cup of sweetcorn
Packet of @woolworths_sa grated cabbage and carrot
1/2 red onion sliced
2 red jalapeños chopped
Sprig of coriander chopped
2 limes squeezed
2 tsp suki sugar
Lemon black pepper
1/2 tsp of salt
1. Place lime juice, chopped chili, salt, peeps and sugar in a jug. Using a fork, whisk until sugar has dissolved.
2. Place cabbage and carrot mix, black beans, corn and red onion in a large bowl. Add dressing. Toss to combine. Serve with chicken.
500 g chicken cut into strips
2 tsp salt,
1/2 tsp pepper,
2 tbsp lemon juice
1/2 tsp parsley
1 tsp paprika
1tsp cayenne pepper
2tsp nacho spice.
Mixed Peppers and onion sliced
Marinate chicken in salt, pepper, lemon, garlic and parsley, paprika, cayenne pepper and nacho spice. In a non stick frying pan add 1 tbsp of olive oil. Add the chicken and flash stir fry. Then add in sliced peppers and onions and spinkle with more spicy nacho spice and toss.
