Halloumi and Beetroot Salad with a Pomegranate Molasses And Olive Oil Dressing

Halloumi and Beetroot Salad a lunch or dinner option and it’s quick, simple and filling to make.
Halloumi is a high in calcium and has over 9g of protein per 100g and Beetroot is a superfood that helps to lower blood pressure and can improve exercise performance.

 

 

 

Ingredients
* 100 g Halloumi sliced
* 4 cooked beetroots sliced in chunks * 2 radishes sliced
* 1/4 cup cucumber sliced * 1/4 cup Chopped mixed peppers * 1/2 Grated carrot * Bag of mixed Lettuce of choice
* 1 small finely sliced red onion
* 1/4 cup pomegranate
Dressing Ingredients
* 2 tbsp pomegranate molasses * ¼ tsp freshly squeezed lemon juice
* ¼ tsp extra virgin olive oil
* Grind of salt 


Instructions
1. Assemble the beetroot, carrots, cucumber, peppers on top of the salad leaves, sprinkling the radishes and finely chopped onion over.
2. Mix all the dressing ingredients together in a small jar.
3. Heat griddled pan until medium hot then brown each side of the halloumi cheese slices.
5. Place the halloumi slices on top of the salad and drizzle the dressing over.

Devour and enjoy the different textures, flavours and tastes. Sweet, salty, sour, crunchy and soft ...it leaves you wanting more.
