Mexican Chili con carne is a Tex-Mex dish that is loved by families all over the world. This chili con carne recipe is loaded with protein and delicious flavors.
1 tbsp olive oil
1 red onion, finely chopped
1 cup mixed peppers, chopped
1 chopped chili
3 cloves garlic, minced
1 kg ultra lean beef/chicken mince
1 tsp smoked paprika
2 tsp chilli powder
1 tsp cumin
1 dash of Worcestershire sauce
500 ml veg, chicken or beef stock
1 tin of red kidney beans, drained and rinsed
4 chopped tomatoes
2 tsp tomato sauce
1 tsp vinegar
Salt and pepper to taste
1. To make your Chilli, heat a large pan over a medium heat and add the olive oil, onion, garlic and pepper and cook until the onion starts to become translucent.
2. Throw the mince into the pan and break it up and cook until it’s been browned, this will take at least 5 - 10 minutes.
3. Add all of the remaining ingredients, reduce the heat and simmer for 30 - 40 minutes until the sauce has thickened.
4. Serve with air fried tortilla chips or rice, salad and a choice of fat free cottage cheese, salsa, jalapeños, avocado with lemon and chili.
Air fried Tortilla Chips
Slice up Woolworths slimmers choice tortilla wraps into 1/8ths. Place into an air fryer for a few mins on 180 degrees.
