Chicken Coriander and Corn Soup

I can remember having this soup on cold winter days in London as a young girl. My mums favorite weeknight soup was a regular meal option while growing up. Having this soup still fills me up of nostalgic memories and of warmth and delicious goodness. Chicken cooked with a flavour of fresh coriander leaves and sweet corn to make a aromatic and healthy soup. This tasty soup is great for light evening meals and weekend lunches.

Ingredients

* 2 chicken breast * 500ml water * 1 bay leaf * 1 tin of cream style corn * 1-2 green chili sliced (2 for added heat) * 1/2 cup chopped fresh coriander * 1/2 tbsp olive oil/coconut oil * 1 onion, diced * 1 garlic clove * Salt and white Pepper to taste * 1 chicken stock pot * 750 ml of fat free milk Method: 1. Place the chicken and bay leaf in a saucepan and cover with cold water. Allow the water to come to the boil and then turn down to a low simmer for 20 minutes, until the chicken is cooked. 2. Remove the chicken from the water (keep the liquid) and once cooled, shred using two forks. Discard the bay leaf. 3. In the meantime fry the onion and garlic in a saucepan with the oil until glassy and cooked. Add the cream style corn and the liquid from the chicken bring to a simmer for 10 min. 4. Pour in the milk and add the shredded chicken slices and chili. 5. Bring to the boil and add in the chopped corriander simmer for another 10mins and serve hot.
