This fruit tart will bring in all the colours of the rainbow to your tea table. It’s healthy, naturally sweetened using the seasons freshest fruits. You’ll be making this one, over and over again this summer !!!
3/4 cup toasted almonds
1 cup mejool dates pitted
1/2 cup dried currents
1/4 cup desiccated coconut
1-3 tbsp pure maple syrup adjust to taste
1 cup coconut full fat yogurt
1-2 cups fresh fruit see below
zest of 1 lime to taste
1. Soak dates in warm water for 10 minutes to soften. Add almonds to a food processor and pulse a few times until roughly chopped. Drain dates and add to the food processor with the almonds. Add currents and coconut. Add maple syrup, to taste.Blend to desired texture, scraping down the sides as needed. Line a long tart tray with parchment paper.
2. Top each with yogurt and fresh fruit. Sprinkle each tart with as much lime zest you like and then dig in.
