Tabbouleh

This traditional Middle Eastern Salad is made up of couscous or bulgar and planet I of mixed herbs and chopped vegetables. Add more or less, according to your preference as this recipe is really just about creating your own version of the salad that your family will love. 

 Ingredients

1 cup couscous or bulgar 
2 cup vegetable stock 
1 cup fresh flat leaf Italian parsley, finely chopped

1/2 cup coriander 

1/2 cup mixed chopped peppers 

1/2 cup chopped red onion 

1 cup tomatoes, seeds removed and tomatoes finely chopped
1 cup cucumbers, seeds removed and flesh finely chopped
1⁄5 cup extra virgin olive oil
1 teaspoon sea salt, or to taste
2-4 tablespoons fresh lemon juice, or to taste

Method:
In a bowl, soak the couscous in the water for 15mins and cool.  It will plump up. Mix up the vegetables and herbs with the couscous. 
Add olive oil, salt and lemon juice. Stir to combine well. Taste for preference and adjust, if necessary.
Enjoy tabbouleh as a side dish to meats, fish and more.
