Grilled Chicken, Mango, Red Onion, Pepper and Avocado Open Sandwich


 
Upgrade a usual grilled chicken sandwich with mango, avocado, peppers and red onion. This bright and colorful open sandwich packed with phytonutrients is not only full of flavour but incredibly good for you in every way. Ingredients 

1/4 avocado
 
Coarse salt
 
2 slices seeded multigrain bread 

100g boneless, skinless chicken breast marinated and grilled in salt, pepper, lemon juice and garlic @dawoodgtn
 
1/4 mango, sliced
 
1/4 small red onion, sliced
 
1/4 red bell pepper, sliced
 
Drizzle of oil oil 


 
Method
 
1. Make guacamole with avocado, lemon juice, chili flakes and season with salt. Spread on bread. Top with grilled chicken, mango, onion, pepper, and greens and finally drizzle some olive oil.
