Classic comfort food, just got a make-over… the low fat tuna melt. Adding veggies to your tuna, replacing the full fat cheese and mayonnaise with lemon juice and Woolworths slimmers choice mozzarella cheese and serving it opened faced makes this classic sandwich lower in fat and Shazeats#Mandysway friendly. You can use your favorite low Gi bread or I personally prefer to have it on the Blue Ribbon Sandwich squares and then call it a Tuna Melt Tostada.
Ingredients: * 1 can tuna (in water) drained * 1/4 red, yellow green peppers chopped * 1/4 cup chopped cucumber * 1/4 cup red onion chopped * 2 tbsp lemon juice * salt and pepper * 1/4 cup Woolworths grated slimmers choice Mozzarella * 1 slice low GI Bread, I personally prefer the Blue Ribbon Brown sandwich squares. Gives you 2 slices. Directions Combine tuna, peppers, cucumber, red onion with lemon juice and salt and pepper. Grill the bread on 1 side for a few minutes then place the tuna filling and sprinkle the mozzarella cheese and grill again until the cheese has just melted. Serve immediately with a side salad and enjoy !!!!!
