All this Thai food and you can have endless options for your meals..... My family for dinner has this complete Thai meal and they love dipping into the peanut butter sauce for the satays. I stick to the carb clever option and have the Beef Satay sticks and Thai stir-fry. However, for lunch the next day I prep my meal with the rice noodles, stir fry and beef satay sticks. Top tip to remember is to always think of the next meal ahead and cook extra for other meal options..... Thai Beef Satay 500g beef cut into strips 2 tsp ginger 2 tsp garlic 2 tsp fresh lemon grass chopped 2 tsp green chilli chopped 1 tsp black pepper 1/2 tsp salt 2 tbsp soya sauce Marinate the beef strips with the above ingredients for a few hours. Put onto skewers, spray and cook high on a grill plate. Grill for 4-5 mins on each side. Skinny Peanut Butter Dipping Sauce 2 tbsp of sugar free smooth peanut butter 1 tsp of Sriracha Sauce 2 tsp of Wellingtons Sweet Chili Sauce 2 tbsp of water Mix all the above ingredients together in a bowl and serve with the beef satay sticks. Rice Noodles 4 Woolworths Rice Noodle Nests submerge in boiling water seasoned with salt for 5-7 mins. Serve immediately. Thai Stir Fry Assorted Vegetables: Cabbage, carrots, green beans, mixed peppers, red onion, celery, spinach 2 tbsp Thai spice 2 tbsp soya Sauce 1 tbsp hoisin Sauce 1 tbsp rice vinegar Heat 1/2 tbsp of oil high in a wok. Add the Thai spice and temper for a couple of mins. Add the vegetables and mix through. Pour over the soya sauce, hoisin sauce and rice vinegar stir and steam for a few mins. Serve with Thai Beef Satay Sticks, rice noodles and peanut butter dipping sauce
