Arabic Spiced Fish, on a bed of Roasted Vegetables and a Radish and Pomegranate Green Salad

This grilled fish was simply marinated in Himalayan salt, lemon juice and a fish spice from Medina. The smells of the spice are of an earthy tone almost like a dukkah spice but a citrusy flavour really bursts through.

This dish was paired with a medley of vegetables from @woolworths_sa compiled of butternut, courgettes, cauliflower and red onions. While roasting the vegetables, a green salad with pomegranate and radishes was dressed in olive oil and a squeeze of fresh lemon juice. 

The roasted vegetables were layered on a board, the salad on top, the grilled fish was placed and lastly a squeeze of lemon juice just to tie everything together. 

A Summer meal, with a variation of different ingredients that pack a fish dish with texture and aroma.
