A joyous way to kick off the season with this Spicy Peach/Nectarine and Avocado Salad. Stone fruits in savory dishes are quite the trend this summer. Put this flavour and fruit combo together and it sweetens up a summer lunch or dinner in a perfect way. The creamy avocados and juicy peaches/nectarines get a kick of spice thanks to red chillies. Ingredients: 3 tbsp. fresh lemon juice 3 tbsp. olive oil 2 tsp. pure honey 1 baby onion, finely chopped 1 chile, thinly sliced Salt and freshly ground black pepper 3 ripe but firm nectarines or peaches cut into wedges 2 avocados, pitted and cut into wedges 1/2 cup fresh mint, torn if large, plus more for garnish 1/4 cuo roasted pistachios, chopped Method: Whisk together lemon juice, oil, honey, onion,and chili in a bowl. Season with salt and pepper. Add peaches or nectarines and toss to coat. Let sit at least 15 minutes and up to 1 hour. Just before serving, add avocado and mint and toss to combine. Season with salt and pepper. Top with pistachios and garnish with mint.
