Schiacciata Small Pita with Cold Meat, Olives and Provenal Cheese

These Sicilian inspired sandwiches are an easily put together for any summer day eating. Especially great for day outs, picnics and just ideal to toast on the braii. The star of the dish is the crushed olives with the herbs it just makes the sandwich filling a little more extra special without so much effort. Ingredients Small Pita bread that can be cut and opened 1 tablespoon of olive oil mixed with 2 teaspoons dried oregano and thyme and a pinch of sea salt. Your choice of Deli Halal meats, roast beef or pastrami 4-5 Kalamata olives (pitted and crushed) A few thin slices of round Provenale cheese @checkers_sa 

Method: Open the pita by cutting off the top about 1/4 inch. Moisten the bread with the olive oil/dried herb and sea salt mixture. Add the meat, then the olives and cheese. Place the sandwich on a hot grill or wrap in foil and heat in an oven for a few minutes on each side to warm.
