Ingredients: -Cherry tomatoes, sliced or quartered (about 10 or 12) -Red onion sliced -1 tbsp capers -1/2 cup roasted peppers -2 tbsp pitted olives - Fresh basil, torn - Dash of balsamic vinegar -1 pack garlic bread or bread of your choice - green pesto, about 2 or 3 tablespoons - 60g grated Parmesan cheese/Mozzarella Method 1. Preheat the oven to 180 2. Heat the garlic bread. 3. Place tomatoes, onions, capers, peppers, olives and basil in a bowl; stir in balsamic vinegar and pesto. Spoon the tomato mixture on each slice and sprinkle with Parmesan/ Mozzarella cheese. 4. Top the mixture on the garlic bread and serve.
