Pineapple Cake

Pineapple Cake This pineapple cake is perfect for warm summer days when you don’t want to spend too much time in the kitchen. It’s creamy, fluffy and not overly sweet. You don’t need to have any kitchen skills to make it. Don’t you just love a recipe when you throw everything in together !!!! Ingredients 2 cups oat flour 1 tsp baking soda 3/4 tsp baking powder 3/4 tsp salt 1 1/2 cups overripe mashed banana 1/2 cup crushed pineapple 1/2 cup honey 3 tbsp coconut milk or milk of choice 3 tbsp olive oil 2 tsp vanilla extract 3 tbsp desiccated coconut or nuts Instructions Preheat the oven to 180 degrees. Grease a loaf pan. Combine first 4 ingredients in a bowl, adding shredded coconut and/or crushed nuts if desired. Add all remaining ingredients, stir to form a batter and smooth into prepared pan. Bake on the center rack for 30 minutes, or until a toothpick inserted into the center comes out mostly clean. Let it cool and serve with coconut cream or yoghurt.
