Avocado Baked Cheesecake

This Avocado Baked Cheesecake recipe is a tasty treat for a summer party. The colour blends of the green and the brown will get the conversation going with your guests and will disappear as soon as you announce that dessert is served. Don’t be thrown off by the avocados in this recipe. The avocados are not overpowering but make the cheesecake texture creamy and silky, and the taste is simply sweet and delicious. Ingredients Base: 1/2 cup dates 2 tbsp almond butter 1/2 cup almonds 1/2 cup rolled oats 2 tbsps cacoa 2 tbsp water Blend together and put in a base of cheesecake tin and chill in the fridge for 30 mins. Filling * 1.5 ripe Avocado peeled and seeded * 1 tub fat free smooth cottage cheese * 1/2 cup suki sugar or xylitol * 1 teaspoons vanilla extract * 2 eggs * zest of 1 large lime 

* 2tbsp of water  Instructions 1. Preheat oven to 180 degrees 2. In a large mixing bowl, place cottage cheese add avocados, suki sugar and vanilla. Mix until well combined. 3. While mixing, carefully add eggs, one at a time until well combined.

4. Fold in lime zest and stir to combine. 5. Carefully pour mixture in pan over crust, evenly smooth out to cover with a spatula. 7. Bake for 30-40 mins. Let cool at room temperature and refrigerate 3 hours before serving. 8.
