Chicken Taco Basket

Yesterday, @shazeats_mandysway had the pleasure of doing a food demonstration @halaalfoodexpo. A stunning event with delicious food by talented food vendors around Gauteng. It was superbly organized and had a great vibe. I decided to do Chicken Taco Baskets as a healthy savoury option for the month of Ramadhan. Yes, on @shazeats_mandysway savouries and haleem are on the plan. This recipe has many different components but put together it really is a flavour and texture explosion in your mouth. 

Chicken Taco Basket 

The Bowl I made the bowl from soft mini tortilla wraps from @yummy_mayfair or you could use a round cutter and cut out mini tortillas from @wooloworths_sa slimmers wraps. 1. Spray and cook a muffin tray 2. Place the mini tortilla into a muffin tray and press down and crimp the edges. 3. Prick the bottom with a fork to prevent air bubbles. 4. Place in a preheated oven and bake at 180 degrees for 7-10 mins. Keep an eye on them they crisp up very easily. Cajun Chicken 500g of chicken cubes 1 cup mixed peppers cubed 1/2 cup chopped red onion 1 tsp garlic 1 tsp chopped green chili 3 tbsp lime juice 1 tsp Himalayan salt 3 tsp @woolworths_sa Cajun spice 1 tsp olive oil 1. Heat the oil and add the garlic and chili. Let it sizzle and then add the chicken. 2. Add the lime juice, salt and Cajun Spice and cook the chicken until the water has dried out. 3. Add the chopped veg and stir through for a few minutes but keep the vegetables crunchy. Assemble the Bowl Baby spinach leaves Avocado chopped with lime juice Hot Salsa @woolworths_sa Sliced radishes Pickled Jalapeño slices Crumbled fat free feta 1. Place the chicken taco baskets on a plate and start with the raw baby spinach. 2. Next add the chicken filling with peppers. 3. Salsa goes on top of this, and then the avocado and fat free feta. 4. Add sliced radish on top with a jalapeño to garnish and an extra kick.
