Back Home, Chickpea Salad

Grilled Tandoori Chicken, Chickpea Salad, Beetroot and Carrot Salad, Yoghurt, Pita Bread and Lemon and Mint Juice......I’m so happy to be back in sunny South Africa, in my kitchen, let’s cook away right here from home !!! 

Chickpea Salad 1 tin chickpeas, drained and rinsed 1 red onion chopped 1/4 cup coriander chopped 1/4 cup mint chopped 2 red chillies, finely chopped ½ cup cucumber, de-seeded and diced 1/2 cup red pepper chopped Juice of 1 lemon 1/2 tsp paprika Salt and lemon pepper Mix together the chickpeas, onions, coriander, mint, red chillies, cucumber and peppers along with the juice of 1 lemon. Season, cover and leave to sit at room temperature until you’re ready to eat.
