Hot and Sour Soup, Spring Rolls and Crispy Chicken Hoisin Wraps

I have often expressed my love for Chinese Food and today’s iftaar was of an oriental flair. We had the hot and sour soup, air fried spring rolls and air fried chicken strips. My family made their own wraps by placing the hoisin dipping sauce for the base, topping it with slithered spring onions, cucumber strips and shredded iceberg lettuce, the crispy chicken and then finally the with sweet chili sauce. It was just the perfect ensemble for the #thesavouryrevolution Hot and Sour Chicken and Sweetcorn Soup This soup really gets your tastebuds dancing..... 

Ingredients: Chicken-2 fillets cubed 1/2 onion chopped 1 tbsp olive oil Cup of cubed mixed veg, green beans, carrots, peas, corn Can of cream style sweetcorn Tomato Ketchup – 2 tblsp Soya Sauce – 1 tblspn or to taste Vinegar – 1 tbsp or to taste Red Chilli Paste – 2 tsp or to taste Ginger Garlic Paste-1 tsp Salt to taste Pepper to taste Finely chopped green chilli Coriander chopped as needed

Method: Braise the onion in 1 tbsp of olive oil. Add the cubed chicken, salt, pepper, ginger and garlic and finely chopped green chilli and cook the chicken through. Then add the tomato sauce,red chilli paste, vinegar, soya sauce and braise for a few minutes. Add in the mixed vegetables and the can of cream style corn. Add 1.5 liters of water and bring the soup to boil. Garnish with freshly chopped coriander and mix well. Serve hot.
